Why do some recipes substitute applesauce for vegetable oil?

What are the different effects, especially in baking? Why do some recipes substitute applesauce for vegetable oil?
Applesauce is used in place of vegetable oil in recipes to reduce the fat and calories because it keeps the baked product moist. In baking it's not quite the same texture, things are a little chewier without the added fat, but usually it's still very good. Why do some recipes substitute applesauce for vegetable oil?
ive done it with muffins, but i also had mashed bananas and splenda as ingredients, they came out veryyy moist, not really the texture of a muffin but i actually like the different texture..and they tasted good
they substitute it for nutritional reasons... it is healthier.
