Any recipes for vegetable ice cream?

Enjoy the wholesome goodness of my world famous carrot ice cream:





2 cups wholesome carrot slices


2 cups half-and-half


2 cups heavy cream


1/2 vanilla bean, split lengthwise


2 wide strips orange rind


1 cinnamon stick


9 egg yolks


3/4 cup sugar


Directions


In a small saucepan, boil the wholesome carrot slices in water until very tender. Drain them then make a puree and reserve it.





In a saucepan over medium heat, heat the half-and-half, cream, vanilla, orange rind, and cinnamon stick, whisking occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat and let the flavors infuse for 10 minutes.





Whisk the egg yolks and sugar together. In a thin stream, whisk half of the cream mixture into the egg yolk mixture. Then pour the egg-cream mixture back into the saucepan containing the rest of the cream mixture. Heat over medium heat, stirring constantly with a wooden spoon. At 160 degrees F, the mixture will give off a puff of steam. When the mixture reaches 180 degrees F it will be thickened and creamy, like eggnog. If you do not have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat.





Meanwhile, in a bowl put 2 handfuls of ice cubes in the bottom, and add cold water to cover. Rest a smaller bowl in the ice water. Combine the wholesome carrot puree with the custard, mixing well. Pour the cream mixture through a fine sieve or chinois (to remove the vanilla bean pieces, orange rind, and cinnamon sticks) and into the smaller bowl. Chill 3 hours, then continue according to the directions of your ice cream maker.
I don't have any recipes for vegetable ice cream but if you mean vegan ice cream, I highly suggest checking out vegweb.com. If I am not mistaken, some of the recipes do not require an ice cream maker.


I have an ice cream maker so I mix 2 cups of coconut milk, 1 cup of evaporated cane sugar (sometimes switching for 1/2 cup of stevia OR 1/2 cup of evaporated cane sugar with 1/4 cup of stevia), and 2 tsps of almond extract. If you find almond extract to be too sweet, you can try vanilla instead, or just use less almond. Then I add this mixture to my ice cream maker. You will need to check the manual for your own ice cream maker; they may vary.

This person is obviously too busy for google so I'll help you out here. Just take a tomato, a carrot, a couple radishes, and a cucumber or two, and put it throw the food processor. about 5 seconds should do it. Then add in some milk and sugar to taste. Alternately you could skip the food processing part and just put them in whole. You need to freeze it next or put it in an ice cream maker, but if you ask me how to build one or where to buy one: seriously, just google it. I've never done this BTW and it sounds disgusting, but I figure that's how you would do it. Your welcome!
I made avocado ice cream once (not a vegetable, but close enough), it was a complete disaster. I would suggest googling carrot ice cream. You could add cinnamon and nutmeg or pumpkin pie spice and I bet it would taste great!
Do you actually mean vegetables or just vegan?
