First of all, well done! Veggies are so good for you and it's good you're wanting to try more of them!
Add veggies to things like chili con carne, you won't notice the difference! Mushrooms are great as are diced carrots and bell peppers in chili.
Try the same with bolognese sauce, fry celery with the onions and garlic, add some peppers and even frozen peas. It will taste great! You can also use this as the filling for lasagne.
Do you like eggs? I like cooking a crustless quiche in an overn proof dish. Break 4 eggs per person in a large bowl, add a small pot of single cream and beat.
Layer mushrooms, sliced onion, bacon (raw), diced peppers and grated cheese in the dish, when you've finished, cover it all with the egg mixture, it should cover the ingredients. Oven it for about 45 mins at around 160 degrees.
Serve with a salad and new potatoes.
Also, try roasted veg, it tastes so sweet! Put olive oil in an oven tray with 2 tsp of some chili flakes (if you like spice), pepper and salt. Chuck in some peeled small onions (or larger ones cut up), 2'; chunks of carrot and bell peppers. Roast at the same time as the crustmess quiche to save power - delicious!

I was going to suggest you start w/ eating them raw. Less flavor, more crunch.
Try Carrot-Raisin Salad w/ some pineapple in it.
Green salads w/ all sorts of fresh veggies cut up: yellow summer squash, zucchini, frozen green peas (they thaw almost instantly),
Salads made from Broccoli, Cauliflower as the main ingredient.
There are many ways to add vegetables to dishes and you wont even notice they are there. For instance, if you are making lasagna, you can add veggies to the meat sauce, and you will still taste the meat but will get the benefits of the veggies too.
Cook carrots until tender, throw in a handful of brown sugar and a glob of butter. Put the lid back on and swirl it around.
Add shredded cheese or parmesan cheese, buttered breadcrumbs, or bacon bits to cooked vegetables for a different taste.
i steam them, and blend them and put them in any ole dish lol. i added it to sauces etc...
you can add any veggies to salads, just dice them and shave them..the dressing to me makes the difference
