Please Exclude potatoes, green beans, corn, and anything fried


Does anyone have some good/healthy vegetable side recipes?
it's not frying so much as water sauteeing... but best done in a frying pan rather than a usual pan... I love these.








Slices mushrooms, 2 tablespoons water for about 3 mushrooms sliced, a pinch of crushed garlic.








a cup of spinach and a bit of shredded ginger and hot chilli saue








sliced bell peppers, broccoli courgettes, a bit of sliced onion, spinach, sliced mushrooms, herbs to your preference-either rosemary, sage, dill, basil, oregano, garlic for italian, or chilli, garam masala, pepper, jalepenos for something spicer. layer different veg between slices of egg plant, top with a basic tomato and basil sauce or healthy jar pasta sauce and oven bake on low for over half an hour, til top looks browned slightlyDoes anyone have some good/healthy vegetable side recipes?

Make a vegetable casserole with foods you like. cauliflower, broccoli, carrots, cabbage, silver-beet, green peas, other beans etc.
Did not know you needed a recipe for veggie soup. I always make it with what I have on hand or with my favorite veggies. Check out any soup recipe and just add what you want to it. The recipe will be a guide for how much of stuff and time of cooking.
corn you can use canned corn or simply steam corn and add butter to the corn like smart balance


or


lima beans with butter on tops


or


stuffed tomatoes or mushrooms in the pan take bulk out of them and fill them with ricotta cheese and bread crumbs on top


or


bell peppers yellow red green fill with spanish rice and or meat and tomato sauce


or


carrots sliced and steamed

This recipe for Brussel Sprouts in Beer combines one of my favorite things (beer) with one of my least favorite things (brussel sprouts). But, hey maybe brussel sprouts are your thing so check it out.

1 lb Brussels sprouts; fresh


1 x Beer; any brand, to cover


1/2 t Salt


2 T Butter





Trim and wash sprouts. Place in a medium-size saucepan and pour


enough beer over them to cover. Bring to a boil, reduce heat and


simmer for 20 minutes or until tender. Add more beer if needed, as


liquid evaporates. Drain; add salt and butter. Serve hot.

Green Beans with Browned Butter and Pine Nuts.








Boil some water with kosher salt, add green beans for 5 minutes or until just a little tender then drain and move to ice water to stop the cooking process. set aside.





Melt a 1/2 stick of butter in a small sauce pan, until it is a light brown color.





Add the pine nuts, about a handful or two, really however much you want.





BE CAREFUL! pine nuts burn easily so make sure you watch them the whole time.





Wait until the pine nuts are a little browned also, and pour over the green beans.
