Anyone have any good vegetable recipes??

i asked this in vegetarian, but apparently they do not give out recipes... :) would anyone like to share with me some recipes for vegetable dishes..whether it be a side or a main dish recipe...thanks!!Anyone have any good vegetable recipes??
This is one of many excellent recipes found in the Moosewood Cookbook:


Cauliflower Cheese Soup (I have modified this a bit for my own tastes)


1 head cauliflower -


2-3 medium potatoes -


1 onion


2-3 tablespoons garlic (2-3 cloves)


8 medium carrots


2 cups grated cheddar cheese


1-2 tablespoons fresh dill (to taste)


salt and pepper to taste


2-3 cups water (or vegetable stock)


1 cup milk


1/2 cup buttermilk





Cut up 1/2 cauliflower and the rest of the vegies, place in a pot. Add liquid and boil until soft. Put in a blender until smooth. Return to pot and place on low heat. Add milk and cheese and stir until completely smooth. Add spices.


Meanwhile, chop remaining cauliflower and sautee in butter (if you like your soup smooth, just cook the entire head and proceed as above). Add sauteed cauliflower. Just before serving, add buttermilk, and garnish with chopped green onions. Bon Apetit!Anyone have any good vegetable recipes??

I just found a great Roasted Vegtable soup recipe and made it yesterday. It was yummy! Kind of like a deluxe version of Tomato Soup.





Ingrediants:





1 large leek chopped up, a big handfull of sliced carrots and celery, two or three cloves of garlic, 6 beefsteak tomatoes cut in half with core removed, extra virgin olive oil, two large cans of vegtable stock, and salt and peper to taste.





Put all the ingrediants except the broth in a lasagna pan and coat with olive oil. Add a dash or two of salt and pepper and roast at 400 degrees for about a half hour. Peel the skin of the tomatoes and put the veggies in a stock pot with the vegtable stock and 1 cup of water. Bring to a boil. Then puree it in a blender.

Easy Sauerkraut With Apple and Kielbasa


INGREDIENTS:





* 1 pound sauerkraut


* 1 pound kielbasa or other smoked sausage


* 3 to 4 tart cooking apples, thickly sliced


* 1/2 cup packed brown sugar


* 3/4 teaspoon salt


* 1/8 teaspoon pepper


* 1/2 teaspoon caraway seeds


* 3/4 cup apple juice





PREPARATION:


Rinse sauerkraut and squeeze dry. Place half of the sauerkraut in a slow cooker.





Cut sausage into 2-inch lengths; place in slow cooker. Continue to layer in slow cooker, the sliced apples, brown sugar, salt, pepper and caraway seeds. Top with remaining sauerkraut. Pour apple juice over all.





Cover and cook on LOW for 6 to 8 hours or until apples are tender. Stir before serving.


Serves 4.
I grill my Italian squash.Put yellow and Italian squash in a foil pouch.Add rings of onions,sea salt,dab of real butter,and 4 large cubes of ice.Seal the foil well(no leaks) grill turning frequently.They take adleast as long as corn.Great and everyone loves them...
Vegetable Ravioli:





6 servings





1 1/2 tomatoes, diced


1 onion, chopped


8 whole mushrooms, sliced


1 tablespoon garlic, minced


1 cup spinach, chopped


1/2 cup low fat cottage cheese


2 tablespoons basil, minced


black pepper, Freshly ground


48 eggless pot-sticker shells





1. Combine the tomatoes, onion, mushrooms, and garlic in a saucepan. Cook over medium heat until the mixture is somewhat dry. Set aside to cool.


2. Combine the tomato mixture, spinach, cottage cheese, and basil in a large bowl. Add pepper to taste


3. On a cutting board, lay out a single layer of pot-sticker shells. Using a pastry brush, moisten the edges with water. Place 1 tablespoon of the spinach mixture onto the center of each shell. Cover with a second pot-sticker shell and press the edges together with a fork to seal. Repeat with remaining shells.


4. Cook the ravioli in boiling water for 3-4 minutes.


5. Serve hot with pasta sauce.
I use this REALLY easy veggie side dish a lot during the summer. . . .Slice up summer squash, eggplant and zucchini to small cubes. Use one packet of Lipton Onion Soup dry mix, coat the veggies with the packet, and a little olive oil (I just eyeball it enough so they are all coated with the mixture) Toss the veggies into some well oiled foil, and put them on the grill for about 20 minutes or until they are soft. Serve them just as they are OR take them out, top with cheese and then broil for just a few minutes until the cheese melts. I've even added in some tomatoes on the top for a little bit of sauce. People love this recipe and it's so easy, tastes nice and fresh for summer. I have used different soup varieties as well, other than the onion. They have a garlic and herb which is nice. People always ask how I get such a nice flavor, and I cheat using the pack!

try iceberg lettuce, shredded carrots, with some vinegar and oil for a dressing :)
k Ill tell a popular vegetarian dish:





Take 4 potatoes. Chop them into small pieces, like graded stones.Soak them in hot water for 5mins and then peel of the skin(They will turn slender so it will be easy to cut).Then put them in a Pan and keep it aside. Now fry some mustard, coriander leaves, . The mustard should blast(in the sense it must make sounds). Then put this in a bowl. Now in the potato pan add some cocanut shavings Salt to taste and add the fried items from the bowl. Now with a utensil tool, like spoon , keep the pan on the stove and heat it for sometime for 6-7 mins until the potatoes turn somewhat brown. While heating add some Chilli powder(less quantity) and with a huge spoon keep turning the potatoes. Do this for sometime say 2-3mins. Then after the potatoes are heated, add a spoon of lime to it. ow add some coriander leaves and serve it hot. It is a side dish for Bread, Rice, Tiffin etc. Ill bet u ll turn fond of it

Squash stew.





Cut up a small onion, a couple of zucchini's and a couple of yellow squash, and add a can of tomatoes in a pot and season to taste (usually just a little salt and black pepper). Let it cook a few minutes until the squash has softened. Sometimes we add a little jalapeno or some spicy canned tomatoes to give it some pop.





Fried spinach is also good. We like to fry bacon first and use the drippings from that for the spinach, but if you're doing a vegetarian thing your could substitute veg. oil or margarine instead. Saute a little onion first, the drop the spinach in ( we usually use 2 bags)... it cooks down a lot.





Fresh snapped green beans and new potatoes also cook up great together...
What about.....


1 package of frozen California Mix(broccolli, cauliflower, etc)


1 pkge semi-firm Tofu


(I'm not a vegan, I'm a vegetarian, so I eat cheesey stuff)


Ranch dressing to taste


pepper, salt, etc





Cook Veggies, slice up 1/2 of pkge(less if You want) of Tofu, por some dressing over, salt and pepper to taste, and mix . It has enough protein to be the main dish, so it can be either.
rattatouille, cube up an eggplant, red pepper, yellow pepper, summer squash, zucchinni, onion, toss with olive oil salt pepper, garlic, thyme, roast in 425 degree oven stirring every 10-15 minutes until well roasted, finish with a little lemon juice mixed with a little more evoo and enjoy
