Briami Ala Bergy (Vegetable Casserole)
Ingredients:
2 lbs zucchini, cut in 1/2-inch slices
1 lb potatoes, cut in 1/2-inch slices
2 green sweet peppers, membrane and seeds removed and coarsely chopped
5 garlic cloves, crushed
2 cups chopped tomatoes (peel if you wish)
1/2 teaspoon white sugar
2 onions, thinly sliced
Salt and pepper
2 tablespoons fresh parsley
2 teaspoons fresh dill or fennel
1/4 cup lite olive oil (or virgin)
Parsley or dill or fennel (for garnish)
Steps:
1. Mix together the garlic, tomatoes and sugar.
2. Oil an oven dish large enough to hold all the ingredients.
3. Place some onion on the bottom of the dish.
4. Mix zucchini, potatoes and peppers.
5. Add a layer on top of the onions.
6. Top with some of the tomato mixture.
7. Season with salt %26amp; pepper.
8. Sprinkle some of the herbs on top and drizzle with the oil.
9. Continue layering until all ingredients have been used ending with a layer of the herbs and drizzle with oil (this may be 3-4 layers depending on the depth and size of your dish).
10. Cover and cook in a 350掳F oven for 1-1 1/2 hours.
11. Uncover for the last 15 minutes.
12. Garnish with herbs on the side and serve.

INGREDIENTS
2 (15 ounce) cans mixed vegetables, drained
1 small onion, diced
1 (10.75 ounce) can condensed cream of chicken soup
1 cup mayonnaise
1 cup shredded white Cheddar cheese
36 buttery round crackers, crushed
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl combine the mixed vegetables, onion, soup, mayonnaise and cheese. Mix well and spread mixture into a 9x13 inch baking dish. Top with the cracker crumbs.
Bake about 30 minutes, or until browned and bubbly
Vegetable casserole with caraway dumplings
Ingredients
2 tbsp olive oil
12 whole button onions, peeled
2 sticks celery, sliced
2 leeks, sliced
2 carrots, peeled and cut into wedges
350g/12oz swede, peeled and diced
300ml/陆 pint vegetable stock
400g/14oz tinned tomatoes, chopped
2 tbsp fresh parsley, chopped
2 tbsp fresh thyme, chopped
1 bay leaf
1 tbsp dark soy sauce
1 tbsp tomato pur茅e
salt and pepper
125g/4oz fresh breadcrumbs
2.5ml/陆 tsp caraway seeds
1 large egg, beaten
Method
1. Heat the oil, add the onion, celery, leek, carrot and swede, cover and cook gently for 10 minutes.
2. Add the stock, tomatoes, parsley, thyme, bay leaf, soy sauce, tomato pur茅e and pepper. Bring to the boil, cover and simmer for 20 minutes.
3. To make the dumplings mix the breadcrumbs, caraway seeds, egg and seasoning. Shape into twelve balls.
4. Add the dumpling balls to the vegetables, cover and simmer for a further 10 minutes.
