I'm going on a vegetable diet. WHAT ARE SOME GOOD VEGETABLES/VEGETABLE RECIPES I CAN EAT FOR MY DIET??????????

i'm fine cooking for dinner, however, i'm in highschool and need food to bring for lunch...VEGETABLE food(that doesn't need heating -- i don't have microwave access at school) with near 0 calories(since vegetables are 0 calories for the most part).


and i'd also like some quick fixes i can eat after school at my home(i can use the microwave/oven/stove/etc.)


any good ideas would be welcome!!!

As a lazy man who is on a Low-Fat and therefore almost a veggie diet, I have found that the Lipton/Knorr Rice dishes are both easy to prepare and very tasty. There are about 8 different ones.





Basically, all there is too it is to dump the bag of ingredients (rice included) into a quart size microwavable container, and add 2.25 cups of water. Nuke it for about 12 minutes and you have about a 500-600 calorie meal which is quite filling!





You can also fix this in the morning, put it in a thermos bottle and use one of those ice-cream sundae spoons (long handles) to eat it hot.





By eating a low fat meal like this, I find I am full on about 1200 calories and end up having to force myself to eat up to the 1800 calories I am trying to stick to.





I almost forgot, I am also taking 2 'Alli' over the counter pills which are basically fat-blockers.

the wrap itself has about 40 calories which is not bad at all and you burn that off in a day walking around anyway.





basically just cut up any veggies and wrap them up!





my favorite is red, yellow and green sweet peppers diced up with red onion and lettuce!
You can't go on a zero calorie diet because you'll be falling asleep where you stand. My friends and I ate salads everyday for lunch in high school. But we also had a regular supper with our families.





Aside from the obvious raw celery, raw carrots and cucumbers there are olives, pickles, green beans (in a salad or just with dressing,) tomatoes, broccoli, and cabbage (great sliced thin and mixed into a salad.) You can get a little protein by stuffing celery sticks with cream cheese or putting shredded cheese or cubes of cheese into a salad. Shred your carrots and add them to your salad if you want a change.





Don't pour your dressing on your salad until you are ready to eat it. Bring some dressing with you in a small container you can put in with your lunch. There aren't many calories in a few crackers, which you can have with your salad also. And fruit is not fattening. Have a piece of fruit whenever you are hungry.





Broccoli Salad With Bacon





broccoli florets (fresh or frozen)


onion - purple or Vidalia


2-3 slices of bacon, cooked and crumbled


1 cup shredded cheese





Pour Low-Cal French or Blue Cheese dressing over salad.





GREEN SALAD WITH BALSAMIC DRESSING





Romaine lettuce torn into bite-sized pieces


Green pepper thinly sliced


Cucumbers, peeled and thinly sliced


Red onion, thinly sliced


Tomato, cut in wedges (optional)


Salt and pepper to taste


Balsamic Dressing





Place the salad ingredients in a large bowl. Pour the


dressing over salad. Toss.





FRESH FRUIT SALAD





1/4 cup seedless green grapes


1/4 cup strawberries, cut in halves or 1 c. whole raspberries


1 medium peaches


1 small bananas


lettuce


Yogurt





Mix strawberries and grapes. Slice peaches and bananas Pour some yogurt onto the fruit. Spoon salad onto lettuce.





Try varying your fruits by using Mandarin oranges, pineapple chunks, mango or kiwifruit. And Crystal Light has 0 calories.
Salads, and fruits are your best bet, add different beans to your salads to add protein.Garbanzos are an example.You can make spring rolls with rice sheets and add cucumbers, avocados andsprouts, or any vegetables you like.Carots and dip, peanut butter and celery are other options. Tofu is another option, you can snack on nuts too.I personally love fruit salads. nuts,dried fruit and baked goods could also help you feel full


a lot can be done with yoghurt and eggs ( I dont know if you are a complete vegan or not). Either way you need proteins. nuts and beans are your option if you dont eat eggs and dairy.Vanilla Soy milk is one of my favorites, I even put it on cold cereal.


vegetarian Substitutes for meat, chicken and dairy are in the market now ( tofu dog for example)


I love sugar snap peas dipped in hummus.


veggie sandwiches made with cucumbers, tomatoes, sprouts and tofu cheese ( maybe luncheon meat substitute made with veggies could be good for you)


As for cooking I always stuff cored out zuccinis, eggplants, and bellpeppers with a rice mixture ( I saute onions , garlic , cilantro and mushrooms and then add tomato juice to the stuffing till it absorbs all the fluids) add rice to the sauteed ingredients,after I stuff the vegetables I cook them in vegetable broth over low heat for about 30 minutes till the rice cooks

a mixed fruit salad would be good or perhaps some fruit which are nonetheless tasty and cheap AND good for nutrition like oranges
A salad would be good to bring to school, with whatever you like in it, olives, onions, cucumbers, tomatoes, etc. with a low fat dressing like the wish bone salad spritzers which are yummy! You could make a cucumber salad with sliced cuc's, onions, vinegar and spices, that's pretty tastey. For after school, they make this frozen brand of veggies that you heat up in the microwave with spices and everything.
