I麓ve been on a roll making vegetable soups but need ideas for more healthy recipes?

I make cauliflower soup with one tablespoon chicken buillion, 1/2 cup water and one cup skim milk. I make brocolli soup like this as well.





What other veggies should I try?





I麓ve never made a lot of soups, but love it because they麓re so filling and low in calories.I麓ve been on a roll making vegetable soups but need ideas for more healthy recipes?
Roasted Garlic and Vegetable Soup with Pasta


Very yummy soup! Good for what ails you! Low cal, easy to make.





1 garlic head, seperated and peeled


1 tablespoon olive oil


1 onion


1 red bell pepper


4 cups chicken broth (sodium reduced)


2 cups water


2 carrots


1 tablespoon tomato paste


1 teaspoon dried basil


1/4 teaspoon pepper


4 cups shredded escarole (, I use Kale ';or'; Spinach)


1 1/2 cups broccoli, chopped


1 cup small shell pasta (shells, macaroni etc)


salt (optional)


grated parmesan cheese





Preheat oven to 400.


Allow garlic to sit for 15 mins.


Then wrap garlic in foil and place in a small casserole.


Bake 45 to 50 mins or until soft when squeezed.


Warm oil in a soup pot over med heat.


Add onions and peppers.


saute 5 mins, add broth, water, carrots, tomato paste, basil and blk pepper.


Bring to a boil, reduce heat and cover, simmer 10 mins.


Remove 1 cup liquid.


Mash garlic into the liquid.


Stir into the pot.


Add escarole (greens) and simmer 7 mins.


Add broccoli, cover and turn off heat.


Cook the pasta according to package directions.


Drain and stir into the soup.


Adjust seasonings.

SOUP:- CREAMY TOMATO


1/2C Chopped onion.


2T Butter.


1/2t Basil leaves.


1/2t Paprika.


1/4t Garlic powder.


6oz Cream cheese. (soft)


1 Small can Cream of tomato soup.


1 1/4C Milk.


32oz Stewed tomatoes.


Cook onion in butter until it is very soft and transparent; add basil, paprika, garlic powder, and cream cheese.


Cook until creamy.
I make my own version of ';Canned Soup';.


Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.


Cook on stove top...or Crock Pot.


Enjoy.





Canned:


corn


peas


carrots


gr.beans (any variety)


lima beans


wax beans


tomato (any variety)


potatoes (whole or sliced...or both whatever you like)





You get the idea....lol.





Also add a package of shredded cabbage (cole slaw mix).





You can even add a package of onion soup mix.





If it gets to dry and needs more liquids....add tomato juice...V-8...etc.
