Veggie Delight:


cut up the raw veggies(califlower,broccalli,celery,grad the carrots,olives,peppers,any raw veggies u like)


1 or 2 cans of crossiant rolls flatten on to cookie sheets


bake about 5 minutes (til done)


Mix up 1 cup of sour cream with ranch dressing or phillidepha cheese


Spread evenly over the crust


sprinkle the veggies all over it


add shedded cheese all over it


Cut into 2';x1'; bars


chill for about an hour


serve cold





I do this for all my fmily gatherings

Slimming Veggi Soup


From: Soup for all Goodness Health





Ingredients:


5 tomatoes


1/2 cabages


4 onions


1 bell pepper


1/2 stalk celery





Method:


(l) Wash and drain all ingredients. Then cut into small pieces.





(2) Boil 6 cups of water. Put in all ingredients. Bring to boil for 15 minutes, and then simmer for 30 minutes until tender.





(3) Add chicken stock or curry powder for different favors. Add salt to taste.

Cauliflower Bake





1 whole head of cauliflower, leaves removed


1 cup mayonnaise


1 tbsp regular yellow mustard


1 cup shredded cheddar cheese





Boil whole head of cauliflower in a large pot with salted water until tender. Transfer to baking dish, preferably ceramic. Mix mayonnaise and mustard, spread evenly over top of cauliflower. Sprinkle cheese over top, and bake at 350 f (175 c) oven for approx. 20 mins till cheese melts
Carrots w/ brown sugar (Yummy)





Roasted Vegies (Take whatever vegies you like put them in aluminum foil w/ some butter or olive oil w/ garlic...Very Good.)
SCALLOPED CORN....... FRESH CORN OFF THE COB ( ABOUT 2 CUPS) 1 CAN CREAMED CORN, 1 EGG BEATEN , 3/4 PKG SALTINES CRUSHED , 1/8 CUP OF MILK. MIX ALL INGREDIENTS WELL AND PUT INTO BAKING DISH COOK IN 350 DEGREE OVEN FOR APPROX 45 MIN TO 1 HOUR EAT AND ENJOY! ALWAYS GOOD FOR A SNACK AS WELL.
Slice up carrots and steam them with some brown sugar in the water. Tada, Sweet Carrots.
Vegetable Stew





Ingredients


2 tbsps butter


2 cm ginger, chopped


3 cloves garlic, chopped


1 large onion, chopped


1陆 sachets MAGGI庐 Cream of Mushroom Soup


1 litre water


4 potatoes, cut into wedges


2 small carrots, diced


200g cauliflower, cut into florets


1 tbsp MAGGI庐 Thick Soy Sauce


1 tbsps cornflour mixed with three tablespoons water


Salt and freshly ground black pepper to taste


1 cup Chinese lettuce, sliced





Method


Melt butter in a deep pot. Fry ginger, garlic and onion until fragrant.





Add MAGGI庐 Cream of Mushroom Soup and water.





Bring to boil. Add potatoes and continue to cook until they are half done. Add cauliflower and carrots. Continue to cook on medium heat for five to seven minutes. Lastly add the lettuce, MAGGI庐 Thick Soy Sauce, cornflour, salt and pepper.





Bring to boil. Serve with bread or rice.








Fried Mixed Vegetables





Ingredients


100g French beans, cut 4cm lengths


75g cauliflower, cut into florets


50g asparagus, cut 4cm lengths


50g tomatoes, chopped coarsely


50g carrots, cut into matchstick-size strips


3 shallots, sliced lengthwise


1 tsp chopped garlic


2 tbsp oil


1/2 tsp mustard seeds


6 curry leaves


1/2 tsp salt


75g grated coconut, mixed with 100ml water and squeezed out for santan





Mix into paste with 1 tsp water:


1/2 tsp chilli powder


1/4 tsp turmeric powder





Method


Heat oil in a wok and fry mustard seeds and curry leaves for one to two minutes; keep stirring until seeds pop up. Add shallots and garlic and fry till soft.





Stir in chilli and turmeric paste and add tomatoes. Fry till heated through. Add santan and bring to a boil. Stir in all the vegetables.





Cook for four to five minutes or till vegetables are cooked but still crisp. Add salt and simmer for one to two minutes. Serve immediately.








Stir-Fry Rainbow Vegetables





Ingredients


5 young sweet corn shoots, cut into halves


150g cauliflower, cut into florets


1 big onion, quartered


200g medium-size prawns, shelled but leave tail intact


5 water chestnuts, sliced


150g squid, sliced


8 button mushrooms, sliced


100g carrot, cut into flowers


50g red capsicum, cut into chunky pieces


100g sweet peas





Seasoning:


1 tbsp oyster sauce


1 tsp light soya sauce


1/4 tsp salt


1/8 tsp pepper


1/2 tsp sugar


1 tsp sesame oil


1/2 tsp chicken stock granules


1 tsp chopped garlic


3 tbsp oil


4 tbsp water





Thickening (combine):


1/2 tsp corn flour


2 tbsp water





Method


Heat oil and saute chopped garlic until aromatic. Add prawns and stir-fry. Add cauliflower, carrot and water chestnuts. Add water and stir-fry well for 2 minutes. Add seasoning and the rest of the ingredients and continue to stir-fry till cooked. Add thickening to the gravy and stir well to mix.





Dish out and serve immediately.
Do I have to pick one? Eggplant parmagiana--but it's a lot of work. Corn on the cob served with just a bit of butter and salt. Potato knishes (also a lot of work). Potato salad. And potato and onion--either fried or cooked in broth.
roasted honied carrots are delicious as a side dish


stuffed peppers as a course
I know that tomatoes are a fruit, but my favorite is Oven Roasted Grape Tomatoes.





1/2 cup olive oil


1/2 cup balsamic vinegar


1/4 cup brown sugar


1-2 pressed cloves of garlic





Slice tomatoes in half. Mix with ingredients. Place on a parchment paper covered baking pan, sliced side up. Put into a preheated 300 degree oven, and roasted until all shrivelled and prune-like. These are great as is, or cooled and tossed in a salad. You decide.

baked aubergines and courgettes rubbed with olive oil and baked in the oven..........
