Chicken and Peppers with Balsamic Vinegar


* 1/4 cup olive oil, divided


* 4 skinless, boneless chicken breast halves - cut into strips


* salt and pepper to taste


* 1 red bell pepper, thinly sliced


* 1 yellow bell pepper, thinly sliced


* 1 orange bell pepper, thinly sliced


* 1 medium onion, thinly sliced


* 4 large cloves garlic, finely chopped


* 1 tablespoon dried basil


* 1/4 cup balsamic vinegar, divided





DIRECTIONS





1. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Place the chicken in the skillet, season with salt and pepper, and brown on both sides. Remove from heat, and set aside.


2. Heat remaining oil in the skillet over medium heat, and stir in the red bell pepper, yellow bell pepper, orange bell pepper, and onion. Cook about 5 minutes, until tender. Mix in the garlic, and cook and stir about 1 minute. Mix in the basil and 2 tablespoons balsamic vinegar.


3. Return the chicken to the skillet. Reduce heat to low, cover, and simmer 20 minutes, or until chicken is no longer pink and juices run clear. Stir in remaining balsamic vinegar just before serving.

Stir fried broccoli! Break fresh broccoli into pieces. Peel and dice fresh ginger and a clove of garlic. Add oil to a large skillet, add ginger, over high heat. Saute for a bit, add broccoli and stir cooking until almost tender crisp. Add garlic and saute for a bit more, until done to your liking. If desired dash with a bit of soy sauce.
Sometimes when I am in a hurry I like to pick up a large sweet onion and slice from the top down as for stir fry, then I slice large portabella mushroom about 1/4 inch thick, you can also julienne some carrots bamboo shoot, water chestnuts or whatever combination you like and lots of minced garlic. I stir fry this in olive or peanut oil just enough so it doesn't stick.





Once the onions begin to caramelize and the mushrooms are thoroughly done, I add some fish sauce, about 1 1/2 tablespoons and enough oyster sauce to form a nice sauce. Add salt, pepper and some chipoltle Tabasco sauce if you like a smokey zip.





I also stir in some cooked shrimp sometimes or leave as is and serve over hot steamed rice.
