Why would a meat or vegetable recipe call for a pinch of sugar?

When I make homemade red sauce I add some sugar to help with the acidity (along with a pinch of baking soda). Sugar is also used when making bread. Not sure of it's basis in that but it makes certain foods taste better. Just make sure not to add too much. If a recipe calls for 1/2 teaspoon, put in a little less, but not as little as 1/4 tsp.Why would a meat or vegetable recipe call for a pinch of sugar?

Sugar is often added to balance out the flavors.
Depends on what you are making but sugar is often added to balance another (often sour) flavour like for example when you make sweet and sour pork, or sweet and sour sauce where the sweet is sugar and the sour is vinegar. Bon appetit!
Because sweet is one of the four basic flavor profiles, and the best foods use a combination of them to make flavors jump at you. Sweet, Sour, Salty and Bitter. Savory items like tomato sauce, thai tom yum soup, biscuits, salad dressings, and others use sugar to accentuate the other flavors in the dish.
