Any easy low fat vegetable soup recipes?

I got some brocolli carrots cabbages all that stuff but what are some quick easy veggie condensed soups that i can cook for lunch? recipes thanksAny easy low fat vegetable soup recipes?
This a recipe from Weight Watchers. It has 0 points but apparently its really good. My SIL adds vinegar to hers.





2 medium garlic clove(s), minced


1 medium onion(s), diced


2 medium carrot(s), diced


1 medium sweet red pepper(s), diced


1 medium stalk(s) celery, diced


2 small zucchini, diced


2 cup(s) green cabbage, shredded


2 cup(s) Swiss chard, chopped


2 cup(s) cauliflower, small florets


2 cup(s) broccoli, small florets


2 tsp thyme, fresh, chopped


6 cup(s) vegetable broth


2 Tbsp parsley, or chives, fresh, chopped


1/2 tsp table salt, or to taste


1/4 tsp black pepper, or to taste


2 Tbsp fresh lemon juice, optional





Instructions


Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer, partly covered, about 10 minutes.








Stir in parsley or chives; season to taste with salt, pepper and lemon juice. Yields about 1 cup per serving.


Notes


If you like thick soups, consider pureeing this recipe in the pot with an immersion blender.





There are so many variations on this soup recipe. Add or remove vegetables to meet your taste. And save time by using frozen vegetables instead of fresh ones (though the texture of the soup might change a bit). The main thing is to make a healthy stock by gentle frying some diced veggies (carrots onions and celery) untill they have softened and then adding water.


Add aditional veggies so the ones that take the longer to cook go in first.
just chop them all up, put them in a pot of water on the stove, leave it to boil.. add a knorr chicken cube to give it some taste, and salt and pepper..





i love veggie soup, gonna have that tonight. wooh :)
I'm for keeping it as simple as possible when it comes to veggie soups.


I only choose one main vegetable (asparagus, artichoke or zucchini for example), and then add 1 small onion and 1 potato. Here's how I do it:





Chop the onion into pieces, and let it brown slightly in a pot with a knob of butter and 1 tbsp of extra virgin olive oil.





Chop the chosen vegetable, asparagus for example, into pieces, peel and chop the potato into pieces and put everything in the pot with the onion and saut茅 for a few minutes at high heat. Make sure not to burn the onion though.





Cover everything with hot water, add one or 2 vegetable stock cubes depending on how much water you are using, stir, bring it to boil, then turn it to a low heat and let it cook for around 20-30 minutes, until the potato has softened.





Blend everything together, then filter it if it still has particles, and put to cook in the pot again until it boils, then remove from heat and stir.





Serve adding on each plate separately a drizzle of extra virgin olive oil, a sprinkle of freshly grinded black pepper and some freshly miced basil. Serve with roasted bread loafs rubbed with garlic.

If you have any dried green peas ( very cheap to buy), then boil these up in a stock, made with water and a few stocck cubes or bouillon, a celery stick, whole cloves caroots, and a browned onion ( brown in very little oil).





After an hour the pease should be cooked. Remove the celery and caoot and onion- save for a later lwntil soup.


To this soup, add chopped cauliflour, thay you have wilted slightly and browned in the same onion pan.





Simmer the soup til the cauliflour is cooked and then drain all the water out.








Puree the soup with a blender- serve in small bowls with a swirl of nonfat cream or plain yoghurt. Add salt and pepper and chopped mint as garnish. and a few drops of soy sauce.


This is a love green soup- you can add fresh of frozen green peas to the garnish too, and the heat will thaw them- I love this soup.
